School Bread (from Disney’s Norway Pavilion in EPCOT)

Ingredients:
For the dough:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
For the custard filling:
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 3 large egg yolks
  • 1/2 teaspoon vanilla extract
For the icing:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
For the topping:
  • 1/2 cup shredded coconut
Instructions:
  • Make the dough: Combine flour, sugar, salt, and baking powder in a bowl. In a separate bowl, whisk together milk, egg, and melted butter. Add the wet ingredients to the dry ingredients and mix until a dough forms. Knead the dough for 5-7 minutes until smooth. Let it rise for 1 hour, or until doubled in size.
  • Prepare the custard filling: In a saucepan, combine milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves. In a bowl, whisk together egg yolks and vanilla extract. Temper the egg yolks by slowly pouring the warm milk mixture into the eggs. Return the mixture to the saucepan and cook until the custard thickens. Let it cool.
  • Assemble the School Bread: Punch down the dough and divide it into 6-8 equal pieces. Shape each piece into a ball and then flatten it slightly into a disk shape. Place a spoonful of custard in the center of each disk. Fold the dough over the custard and seal the edges.
  • Let the School Bread rise: Place the filled pastries on a baking sheet, leaving space between each. Let them rise for 30-40 minutes, or until puffed.
  • Bake the School Bread: Preheat the oven to 375°F (190°C). Bake the pastries for 15-20 minutes, or until golden brown.
  • Ice and top the School Bread: Mix the powdered sugar, milk, and vanilla extract to make the icing. Drizzle the icing over the warm pastries and sprinkle with shredded coconut.
